    Prepare to take your food to-go or belly up to a three-person stainless-steel bar at this wholly authentic, Chicago-style restaurant in an unassuming strip mall in Stafford. The Italian beef here is the best you'll get outside of Little Italy, and no hot dog place in town has better Chicago-style, all-beef hot dogs (no ketchup!). French fries are decent although frozen, and the greasy yet delicious pizza puff will stay with you for days. Don't forget to grab a cup of Italian ice on the way out. You can even purchase a tub of giardiniera - Italian-style pickled vegetables - to take with you if you want to attempt your very own Italian beef at home.

    When you see Good Dog's baby-blue-and-white food truck with cheerful red and gold lettering parked next to a coffee shop, museum or bar, it's hard not to pull over immediately and get your hands on one of its signature hot dogs. All of the condiments are handmade, the soft buns are from Slow Dough and the specially blended franks themselves are a savory mixture of 85 percent beef and 15 percent pork (all-beef and tofu dogs are also available). But it's the combination of all these items into fun, creative hot dogs that makes Good Dog special: Try the Sunshine Dog with cream cheese, dill relish and pickled red onions or the Guac-a-Dog topped with avocado, jalapeño, tomatoes, onions, roasted garlic aiolo, cilantro, cumin and lime.

    Though some might balk at paying more than $6 for a hot dog, take note: These are worth every penny. Good Dog Houston's signature hot dogs were such a hit on the food truck that its owners, Amalia Pferd and Daniel Caballero, were able to open a restaurant and serve their hot dogs six days a week. Every ingredient -- from the condiments to the buns to the dogs themselves -- is made in Texas, and most are produced right here in Houston. Try the Ol' Zapata for a spicy, overstuffed frank, or the New Yorker, which is topped with sauerkraut, a more traditional approach. The restaurant also allows Good Dog to branch out into salads, sandwiches and soups, all of which give the dogs a run for their money.

    At first glance, a bakery-slash-hot dog stand is a strange idea. But Happy Fatz makes it work, combining the two into a charming little restaurant that's casual enough to incorporate both ideas. It doesn't feel odd to linger over a hot dog and an Italian soda in the old converted house, then follow up your meal with a miniature pineapple upside down cake or a cupcake to go. You can even add a shot of milk for $1. The dogs are better than the baked goods, though: all-beef, served in Slow Dough buns, with plenty of fresh and inventive toppings.

    You can get an old-fashioned cheese coney here, or you can get an authentic Chicago-style hot dog topped with the traditional tomato, pickle, pepper, onion and celery salt. Vienna Beef, the biggest hot dog maker in Chicago, ships all the ingredients to Houston, from the natural-casing franks to the poppy seed-covered Mary Ann Bakery buns. So the dog you eat here is exactly like the one you get in the Windy City. If you've never had a Chicago hot dog before, you owe it to yourself to try this American classic -- especially now that you don't have to fly to O'Hare to get one.

    Kuma Burgers is the brainchild of Willet Feng, former sous chef at Oxheart, Houston’s temple of high-end vegetable-centric cuisine. While you won’t see the same kind of painstakingly lovely plates Feng turned out at Oxheart coming across the pass at this food-court burger counter, you will notice an uncommon attention to balance. Whether it’s the variegated waves of chile heat that weave the SPICY!!! Burger into a sandwich far more nuanced than its warning sign moniker, or the simpler pleasures of a perfectly tuned Texas-style cheeseburger (a steal at $5 for a basic model), the best options at Kuma are presented with all the care of a troop of tweezer-bearing chefs, but none of the frippery that implies. Aggressively griddled, loosely formed patties trail off into continental shelves of crisp beef, perfect for catching yolky runoff and maximizing crusty deliciousness. Each of the house-styled burgers has its own charms (you may want to add an extra patty to some, like the Texan Burger, in order to add just a bit of needed oomph), and the kitchen handles build-your-own requests with aplomb. Kuma offers a veggie burger — a densely meaty slab of breaded and fried soy-braised eggplant — and a “gluten free rice bun” that shows up as compressed discs of griddled rice. For dessert, it’s hard to top the black sesame shake.
