    Billing itself as a “gastropub meets Texas icehouse,” Beaver’s is really neither of those things and something greater than the sum of those descriptions. It’s still one of the most reliably creative restaurants in town, taking risks with Korean-Mexican-Gulf Coast-inspired dishes like jasmine rice cakes with goat cheese, pepitas and kimchi that aren’t expected amongst the barbecue-heavy menu, yet work stunningly well. Located in Historic Sixth Ward off Washington, Beaver’s also still has the best macaroni and cheese in town, as well as one of the strongest cocktail programs.

    Chef Bobbie Patterson moved to Texas from Akron, Ohio, a few years ago. His barbecue sauce line has won awards at food shows and barbecue conventions and sells very well at retail stores and online. Patterson opened the barbecue restaurant on Scott as a sideline to the sauce business. The creamy potato salad, homemade cole slaw, mac and cheese and fluffy cornbread are all outstanding. Patterson also prides himself on his fried catfish and his fresh-ground, hand-formed hamburger.

    The Brisket House refutes the notion that a good barbecue place can't also have good sides. This Galleria-area restaurant's smoked chicken, ribs and brisket are every bit as wonderful as their baked potato salad and coleslaw. Try them all on a three-meat plate for an inexpensive but very filling lunch. For the really hungry, belly up for the Brisket House special, which consists of a pound of meat on a piece of butcher paper with a whole pickle, chunk of cheese and onion.

    Though the Scott Street location has shuttered, Brooks Family BBQ is thankfully alive and kicking with a weekday, lunch-only service offered in Jones Plaza. The Brooks family’s roots go back to the 1970s, when father Harlon moved here from Nacogdoches and opened Harlon's BBQ. Generations of welcoming, friendly service and incredible barbecue have gained them a much-deserved loyal following. Head downtown for the same smoky brisket, sweet and spicy glazed salmon, and fall-off-the-bone ribs that made you fall in love with the family-run barbecue joint in the first place.

    Trent Brooks’ humble trailer in a parking lot next to an Ace Hardware in Cypress is a treasure trove of barbecue and a selection of sides that rotate through the weeks. A few of the sides are daily constants: Baked Beans, Bacon Onion Garlic Potatoes and Cranberry Almond Slaw. Diners can get a selection of specialty meats by the pound and select a few sides for a combination plate. People feeding a crowd, though, can phone ahead to arrange for a whole brisket, rack of ribs or smoked pork butt. On nice days, there are picnic benches under a metal awning to dine at. Otherwise, there is no indoor dining so plan to take your order to-go. Brooks’ serves the best barbecue in the area, hands-down. The fat rendering on the brisket can vary but there’s always a reliable crust, and barbecue fans should most definitely try the pulled pork, pork ribs, deer sausage beef ribs. Also, we’d be remiss not to mention that the well-regarded trailer is one of the few local restaurants that encourage open-carry, even offering an open-carry discount to open carriers with a valid concealed handgun license.

    In the good old days, Roy Burns Sr. used to set up a smoker and sell barbecue on the side of the road. But he settled down under some pine trees in Acres Homes a dozen or so years ago, and developed a loyal following until he passed away. Kathy Braden, owner and daughter of Roy Burns Sr., opened the new location on Shepherd in 2010. Her father's restaurant in the Acres Homes location had received favorable reviews: "The brisket falls apart on the way to your mouth, so it's best to get it on a sandwich. The wet and smoky ribs are among the best you'll find in Houston. Mashed potato salad and beans are the most popular sides." Only time will tell if Kathy has kept the family recipes.

    Although Central Texas has been serving barbecue to hungry Pearlanders since 1969, a lot has changed since then - including Pearland's demographics. The 'cue joint is now owned by a Cuban family, meaning that you'll find Cuban dishes such as pork sandwiches and black beans with Spanish rice. The barbecue is as reliable as ever, though, with the Diana plate - two small meats (we recommend the turkey and chopped beef) and two sides with a drink - still a favorite.

    Originating in Dallas in 1975 as a casual sit-down restaurant stuffed to the brim with Southwestern tchotchkes, Chili's has since grown into a behemoth chain owned by culinary conglomerate Brinker, with more than 1,400 locations in more than thirty countries. Sadly, the Awesome Blossom is no more, but menu staples like Chicken Crispers, Southwestern Egg Rolls and those infamous baby back ribs — which may or may not cause you to spontaneously burst into song — are still going strong. Every location including Houston features a fully stocked bar, and, as would seem fitting for a Southwestern-themed chain, Chili's specializes in margaritas, from top-shelf to sparkly fruit-flavored incarnations. In recent years the chain has continued its worldwide domination with more minimalist, modern decor and promos like the "$20 Dinner for Two." Voice Places is the place to find a Chili's near you.

    Conservatory Beer Garden and Food Hall takes advantage of the recent uptick in the perception of downtown as a destination, while adding value of its own. Late hours and an array of options are a boon to downtown diners, drinkers and after-drink-diners alike. Grab a beer from the well-appointed and reasonably priced tap wall and grab a spot in line at your favorite vendor. If you’re in a group, divide and conquer. Samurai Noodle and Melange Creperie offer the best bet in terms of quality, and some of the pita sandwiches at Myth Kafe make for excellent drinking food. Each of the vendors has its own stumbling points as they expand or acclimate to the different service model necessitated by sharing space in a food hall with broad hours. For now, we recommend steering clear of El Burro and the Bull, where the barbecue just isn’t up to par.

    The Demeris family has been serving Houstonians barbecue since 1964. This casual concept serves traditional barbecue like ribs, sausage, chicken or turkey; if you stop by the Shepherd location, you'll find a few extras like steaks, shrimp and fajitas. For take home meals, you can get up to a gallon of any particular side, including their house-made barbecue sauce. You can also order off the menu and get their Big Puma Tater, a loaded baked potato topped with turkey and barbecue sauce that's the favorite dish of former Astro/current Yankee Lance Berkman.

    Housed in a tiny converted house on 19th Street in the Heights, Gatlin's is a Houston Proud kind of place. Owner Greg Gatlin is a graduate of St. Thomas High School, and he played football at Rice University. Now he mans the pits at Gatlin's, turning out incredible barbecue with gracious flair. The smoky brisket exudes flavor, gently pulling apart with the prodding of a plastic fork. It is meaty and moist, with a gorgeous smoke ring and obvious fat cap. But the ribs...Lord, the ribs. A lightly charred outside encases a tender, meaty interior. Sausage, too, is praiseworthy. Coleslaw and beans are standard fare, but the dirty rice is outstanding.

Every day, Guy's Meat Market puts 200 cooked half-pound, ground round patties in the barbecue smoker with smoldering hickory for about an hour. Then they sell the smoky burgers until they run out, which is generally a little after noon. Try one slathered with barbecue sauce and jalapeños.
